He's stepped down after losing an appeal against a 30-month ban from all football related activities by the Italian Federation.
This was extended in March "to have worldwide effect" by FIFA.
Paratici was suspended after Juventus, where he was sporting and managing director, were found guilty of false accounting.
He's denied any wrongdoing, while the Italian club's case is to be re-examined.
Spurs, who are also without a permanent manager, appointed Scott Munn as chief football officer last week.
